Yes, I agree. I think there are a lot of people that use Ruby 3.0.0. How about
gem 'webrick', '~>1.6'
since 1.6 is the version bundled in Ruby 2.7.1 and it would also allow anything below 2.0?

Linux Setup Instructions incomplete
The Linux Setup instructions (in setup.md) miss several steps that are required (at least for me on Ubuntu 18.04) to get the Gems configured and installed.
After running gem install bundler --user-install I get the error:

so after running this the bundle(r) command is not in my path. I either need to add ~/.gem/ruby/2.5.0/bin to my path or prefix all commands with it.
When trying to run bundle update
I get the error:

The intention is for this lesson to follow on from the shell introduction course. It's focused on workflow management (with an eye on working on HPC systems). It has a lot of the information that I think needs covering in the lessons (though we are also considering adding a lesson on awk, extending it to be covered as a one day lesson), but could certainly do with a lot more interactive challenges for the students (and more descriptive text needs adding, so it is more suitable for self-guided learning).

Using ``make serve`` with ruby 3.0.0
I had an issue running make serve using ruby 3.0.0. I tracked down a solution on this GitHub issue: https://github.com/jekyll/jekyll/pull/8590.
The fix was to run bundle add webrick.
This command adds the following line to the Gemfile:
gem "webrick", "~> 1.7"
Should the Carpentries lesson setup instructions be modified to explicitly install ruby 2.7.1 or would a change to the Gemfile be warranted to add the webrick dependency?
